Capturing the taste of Central Otago
Our Fruit Ports are are a wonderful use of fruits grown on our orchard that don’t meet the exacting cosmetic standards demanded by retailers and consumers.
Beautiful fruit that is too good to be composted or to be fed to our family’s goats.
Working with our winemaker Debra Cruickshank of Tannacrieff Wines, first, the fruit is pulped, and left to inoculate. The juice is then separated from the fruit pulp and is drained into a tank where it is fermented slightly to create some natural alcohol. From there the juice is fortified and then goes straight into neutral French Oak barrels for a minimum of two months before bottling.
