The white cherries are picked and then pulped. Its juice was separated from its pulp, slightly fermented, fortified then aged in neutral French oak barrels. Its aging process oxidises the product giving more of a smooth Tawny texture. Prior to bottling this port is sweetened by 100% natural New Zealand Manuka Honey giving it a smooth, sweet mouthfeel.
