A mix of Clones 777, Abel and cl 115 are carefully handpicked and blended together for fermentation. 30% of the fruit have been left as whole bunches to create greater complexity and tannins. Our Pinot Noir is then pressed in a basket press and racked to French oak barrels for 10 months, 15% being new oak. In the spring a secondary malolactic fermentation takes place and is then racked and fined in February ready for bottling.
Our 7th Heaven Pinot Noir is fruit driven with cherry and plum overtones. Great drinking now or cellar for up to 7 years.
